I know when you drag the taskbar to double height it will display the day of
the week, but how do you get it to display when the taskbar is single
height? I have seen it before on a single height taskbar in Windows XP
Home, but the user had no idea how it happened..

Wherever you saw it before when the taskbar was single in height some third
party software was likely being used to accomplish the task as there is no
setting to achieve that natively in XP.

Huh, that's weird cause it was a computer a buddy of mine sold to an older
lady who was not even on the internet. He actually asked her how she did
it, and she had no idea... He saw it during a remote assistance connection,
and was able to confirm it was a single height task bar. The Clock was in a
smaller font, so the Time was above the day, just like when it's double
height...

I have XP Home on my laptop and it does display the day
of the week, however, just like the old lady I have no
idea how or when it started. I purchased this brand new
and about two or three months after I registered it I
noticed the Day being displayed below the time, I
occasionlly sync with the gov time clock, maybe when I
downloaded the power tools (tweak ui from Doug Knox I
think) it started don't know.

Display Properties/Appearance/Advanced click on Caption Buttons and increase
the size gradually until it shows.

That's the right idea, but from what he said, the fonts and such looked
windows standard.
