I am pretty familiar with creating rules to automate my mail but for the life
of me cannot figure out how to create a rule for the following:

I use POP to access mail and these are passed to various 'inbox's' dependant
on which address they come into. I want to create a rule that auto deletes
them from the inbox after, say 5 days. I leave a copy on the server for 20
days in case of something going wrong.

Can anyone help me create a rule?

Rules can't do it, but AutoArchive can. Configure AutoArchive on your Inbox
to delete messages more than five days old.

Brian is absolutely right. Incase you weren't sure how to do this for
individual folders, right click on the folder you want to change in the
navigation bar and choose 'properties'. Choose the AutoArchive tab in
properties and then click the radio button next to "Archive this folder using
these settings" and there you can choose after what time period you want the
messages either deleted, moved to the default archive pst, or archived to a
different pst.
