is it possible to convert a song that is recorded in 2.1 sound to 6.1? and if
so, with which program??

that does not exist in the original recording?

The answer should be fairly apparent...No, you cannot convert 2.1 to 6.1 (at
least not true 6.1).

I guess that such conversion would result in three equal tracks on each
side.

That would not make sense in itself, but it would then be possible to edit
the tracks, thus making them unequal.

A silly example would be: multiplexing and shifting a single voice to form a
choir or protest march, providing depth and movement.

The requested conversion *may* be possible with Nero SoundTrax2,

Nero SoundTrax indeed seems able to do the conversion. It has project
templates for generating 5.1 and 7.1 audio files.
This program is included with Nero 7, but its Help file is not (yet?)
available.

While this may indeed produce a 6.1/7.1 "compatible" signal, it is not the
same as a file originally recorded as a 6.1/7.1 file. The information fed
to the additional channel would be interpolated from a stereo signal, but
would not be a "true" 6.1/7.1 signal. A signal that was recorded as a 2.1
signal would completely lack the discrete information needed to encode the
surround channels properly. The sound field would be artificial.
