If you want to save your message store (the PST file) then copy that
file (while Outlook is not loaded). If you want to save individual
items to somewhere outside of Outlook's message store, use the "File ->
Save As" menu to save a external copy of it as a .msg file.

Word is not involved in saving items from Outlook. When you are using
Word as the e-mail editor for Outlook, the only part of the e-mail that
Word gets to compose is the BODY of the message. Any files designated
as attachments to the message get added by Outlook when it *sends* that
message. Once Outlook gets it to send it then it can encode the files
(convert them to plain text) and add them into the body of the e-mail to
then send it. Since you never sent the e-mail, Outlook never got the
body of it from Word to then encode and add the designated attachments.
What you saved in Word as a .doc file was only the body of the e-mail
that you were composing in Word but that doesn't have attachments. Word
doesn't do e-mail attachments. Outlook does.
