Address book doesn't find contacts accurately

Okay , this is gonna sound a little confusing but here goes: let say I hit
"new email" and want to send an email to "Tom P. George", so I type his last
name into the to: field, aka, i type george, low and behold I get George
Johnson, and George this , Geoge that, but no Tom P. George.

My question is, how does the address book work when it looks up, do I have
to put in first names only, ???????

I ahve come accross this many times so it is bothering me
 
The Auto Complete feature is a list of previously typed addresses, not those
in your address book. The default now is First Name, Last Name. If you want
to change this, directions are in Outlook Help--look up Last Name. To check
against names in your Address Book, use the Check Names button. (in Outlook
2003)
