Additional Mailboxes and roaming profile

I have added additional mailboxes to users via control panel>mail and
selecting exchange server and going into its settings. From there i have gone
into the advanced tab and added the required mailboxes.

I had to add these additional mailboxes to each user, so i got each user to
log on to there machine and from there i would take control of there PC and
add the required mailboxes to the users exchange settings. This worked fine
on the PC i connected to and setup, the user could access the additonal
mailboxes in Outlook fine. However if this user moved to another PC the
mailboxes that i had added would disapear, so you could not see the mailboxes
in Outlook. When i go into the exchange settings the added mailboxes had also
disapeared. If this user moved back to the original PC the mailboxes are
still there, so it seems the settings for exchange are being saved locally
rather on each of the users roaming profiles.

I need it so that if the users move to a different PC they can still see the
mailboxes that i have added.

Any idea would be appreciated.

Since mail profiles are part of the Windows profile, they roam if the Windows profile roams. The symptoms suggest that you are not using Windows roaming profiles or are using a mandatory mail profile that is recreated each time the user logs into Windows.

They are currently using Roaming profiles so i would presume that it should
save the settings. How do i go about checking if they are using a mandatory
mail profile?

I'd start by looking for .prf files stored on the local machine and an entry in the ImportPRF registry key. I'd also look at the login script.
