Access to boss' email, but they also have to read it

I have Outlook 2000 at work and have access to my boss' email. I print out
any attachments, etc.. Is there a way to "mark" the email so that she knows
that I have already printed these attachments for her?

there are various ways (but I don't have 2000 infront of me so this will be
a bit vague):

edit the subject
flag it and write in the flag's note space "printed"
categorise it as "printed" and show the Categories field in the Inbox
