Word Forms and check and text boxes for Office 2007

I keep trying to insert and make work these supposedly simple text boxes and
check boxes and it does not work most of the time after I protect the
document. Any help? I have already used the help tool and looked online.
 
Are you selecting the Filling in Forms option when you apply the protection
to the document?
