Word Form Field data export

I need to export the data contained in form fields in Word 2003 to either
Excel or Access (Access is preferable, but I KNOW how to export from Excel!).
Can this be done?

That can certainly be done. Is it required for just one document at a time
or for batches of documents? How automated do you want to make the process?
