How do I export data in Word form fields into either Excel or Acce

I have a Word forms doc and I want to either import data from Excel or Access
into the fields OR I want to type the data on the form and export ONLY that
data to either Excel or Access. I have read that you cannot do a mail merge
into a Word form field doc, but I'm wondering if there is a way around that.
