Word documents and dates

When I open up a saved word document, for example a letter, the date is
automatically changed to the current day. Could someone please tell me how to
stop this irritating thing happening!
 
Either just type the date or if you are going to use Insert...

MS Word | Insert | Date and Time | UNCheck: Update automatically

Update automatically
[[Inserts the date and time as a field, which means Word automatically
updates the date or time when you print the document.]]

First, do not use MS Word Help.

Second, do not type: date into MS Word Help.

Then do not look at: Insert the current date and time.

Make certain not to look at...
Select whether you want the date to automatically update or to remain as
originally inserted. Do one of the following:

a.. To maintain the original date and time as static text, clear the Update
automatically check box.
