Accidentally setting headers and footers has greyed out my text and I cannot edit it in any way now.

Are you able to edit the text in the headers/footers?

Nothing I do to edit text has any effect. I cannot even use the side bar.

To answer your question, PastorSue, the easy way to see what is causing the extra page is to press Ctrl+Shift+8 to see formatting marks. Then, look for an extra page break or paragraph mark. You can easily delete extra items like this with the marks showing.
