Don't install any OL updates, or remove OL from your install of Office if
you don't use it or Calendar.
This is a well-known bug. OL updates will hijack any default Mail Client.
Neither the Office nor Windows teams think it's a problem, though they have
given us...
Outlook 2003 is incorrectly configured as the default mail client every time
that you perform an Office installation or Office update that modifies
Outlook: http://support.microsoft.com/kb/933450
It changes the email client. On one machine it changed it from Thunderbird
to Outlook and the other machine it changed it from Outlook Express to
Outlook.
So maybe it's a combination of software that I have that triggers it if no
one else is seeing this?

AFAIK, you can't.
It is not Windows/Microsoft Update, it is the update provided by the
Outlook team.
The Outlook team continues to act as if their product is the default
for everyone.
