Windows 2003 Server Fax Service

I have Windows 2003 Standard with Shared Fax service, up and working
OK.

Is there a way for customizing the Email sent by fax service ? ( for
received and sent faxes )

I take that you are asking about Email Notification that the Fax Service
sends back. That email message is not configurable, by design.
