Win 2000 Server Software Raid Break

Hey
We have a server running windows 2000 and Software RAID 1.

I need to make a clone of this machine.
If I were to shut it down, take out one of the hard drives and boot it up,
it should boot ok correct?

Could I then take the other hard drive and put it into another computer
(same hardware) and have it boot ok, to end up with a clone of the original
server?
