When I respond to an e-mail, it immediately is deleted from my in.

When I respond to an e-mail, I hit send, and then go back to my incoming
message screen and the message is deleted although I didn't hit the "X" key
to delete. If I respond to a message, I do not always want it automatically
deleted. I may want to save it on my current incoming e-mails for a while.
How do I stop the messages from automatically being deleted?

Most likely it isn't deleted but your view is set to only display unread
items.
