Outlook 2007 - When I minimize Outlook it no longer is displayed on the task
bar. This applies only to Outlook. Mozilla, Word, and Excel files all show
on the task bar when minimized.

The problem is not the icon but that it disappears from the tray in the
middle of the taskbar. I can retrieve it with the icon but all of my other
programs that are running minimize to the tray and outlook suddenly stopped
doing it.

Well, then, right-click the icon and uncheck "Hide When Minimized", like
you've already been told.

Jojo / Brian,
I had the same issue. You need to right click on the icon over by the
clock, not the one in the "notification area" (not the center taskbar or left
quick launch bar). If you don't see the Outlook icon there, right click in
the taskbar > properties > Customize, make sure Outlook is set to "always
show". After you right click that icon, you will see the "Hide When
Minimized" option.

The area by the clock IS the Notification Area.
