Probably because you are adjusting the volume in some application which
adjusts the main volume rather than providing its own internal volume
control. Some applications are very rude when it comes to volume control.
Rather than their volume control affecting volume only within that
application, it affects volume for all applications. Just loading the
application will change the main volume to match whatever volume level the
application was last left at.
