Unrar with options that keep directory structure and dates intact?

Please I need help, this actually a question for an unoficial patch for a
game. It asks me to do this:

"To install the patch extract this archive into the game folder using
options that keep directory structure and dates intact and overwrite
files of the same name. Removing is only possible by reinstallation."

How do I find these " keep directory structure " and "dates intact" options?

Usually all you need to do is extract the files and the directorys will be
created.

I think the note you quoted is to stop users from opening the archive with
winrar and just extracting the files.

Try extracting in a temp folder them first and see what happens.
