Depends upon how fast you learn and what you consider 'proficient'.

As many years as there are between major version releases, then you
get to start over again but at a slightly higher point in the learning
curve. Visit your library and notice how many books there are on
learning Office or its various components. Yes, they will overlap on
coverage of material so half that number. Now start reading and
practicing.
