somehow I switched the settings of my taskbar to show the minimized windows
vertically instead of horizontally, so I can only view one at a time, and
have to scroll through them with 2 little arrows. I have looked in taskbar
properties and tried to change it in display as well, but I cannot figure it
out. If somebody knows how to get it back again, I would appreciate it!!

Yes quite simple, just minimize all windows that might be
open at this time, then maximize them one at a time and
reshape them to the way you want them, example the
explorer, just maximize it, then minimize or an instant
messenger, reshape it and minimize then maximize, the
action you took is really only temporary.

Right click Taskbar | Properties | Taskbar tab |
UNCheck: Group similar taskbar buttons | Apply | OK

Group similar taskbar buttons
[[Displays taskbar buttons for files opened by the same program in the same
area of the taskbar. In addition, if the taskbar becomes so crowded with
buttons that the width of the buttons shrinks beyond a certain width, then
the buttons for the same program are collapsed into a single button.
Clicking the button lets you access the document you want. Right-clicking
the button lets you close all the documents you want.]]

Right click on an empty area of the taskbar, click properties, then
uncheck group similar taskbar buttons.
