Can I change the style default in Normal.dot so every time I start a new
document the styles I chose will be there and not the original styles? If
not, what would be the easiest way to accomplish a standardized list of
styles?

You can't get rid of the built-in styles, or at least not the heading
styles. You can modify them, though. You can also change what the default
style is in a new document based on normal.dot. See

You can customize Normal.dot to your preference (see
http://word.mvps.org/FAQs/Customization/CustomizeNormalTemplate.htm), but
often a better approach is to create specific document templates that
contain the styles (and sometimes the text) that you want in a specific type
of document; see
