Storing email outside of PST file

As I understand it, when email is received in Outlook 2000, it is stored
in outlook.pst (or whatever the default name is.) Since I use Outlook
for business and personal use, I would like to be able to keep my
personal email out of my business PST. Can't this be accomplished by
created a new folder (which is a PST file, I think) outside of "Personal
Folders".

Second question: Why does my office computer have "Outlook Today" and my
home computer does not? Both are Outlook 2000. Neither is on an Exchange
server, so both are in IMO.
 
File | New | Personal Folders (or Outlook Data File for later versions) to
create a new personal folders file.

Odd, the personal folder marked to have items delivered to this folder is
considered the default information store and picks up the "Outlook Today"
moniker next to Personal Folders. Is your home account a IMAP or POP
account? (IMAP accounts will create a new Personal Folder file but not be
tagged with the Outlook Today moniker. If you bring up the folder list, you
should see another set of Personal Folders in the folder list that does have
the Outlook Today moniker next to it. (IMAP can only support mail items.
Therefore the other set is considered the default location because Outlook
still needs to support calendar, contacts, tasks, .etc.)

They're all POP. If I click on "Personal Folders", I get Outlook Today,
but the folder list on the left is not showing it, not that it matters.
I'm having a lot of problems with Outlook 2000 that no one is able so
solve, so I'm looking for clues.
