Stop Signatures from replacing the signature in an existing email

In Outlook 2003, I used Signatures as a way of inserting text used often,
for example, "For more information, please do not hesitate to call me at
555-555-1234."

In Outlook 2007, the Insert | Signature replaces text. If I choose the above
Signature, it will replace the current basic signature, i.e., Sincerely,
Christina.

If you right click that signature, do your others show up? What do you have set for the default signature in Outlook?

After furious head scratching, Christina asked:

Try using autocorrect. Outlook 2007 also supports Quick Parts which can be
used for inserting blocks of text.
