I'm looking for a Freeware app that will do:

Staff meeting / work scheduling
Will run on a windows 2000 network and allow staff to book appointments,
but won't allow double bookings.

Must be able to network, have multiple users and stop double bookings...

Extras... Address Book, Contact List.. etc.

I think you looking for free alternative to Outlook, Ms Exchange and
Lotus' Notes.

What I would like is to do is:

Book staff and engineers, without double booking them.

It needs to run on the network, so any member of staff can book people
out and check what people are doing.

A few years back I found a program that did this, but I can't remember
what it is called !!!
