I wish to create a signature using MS Word as the editor
yet when I click on edit it always defaults to Notepad.

In Mail Format /Message Format I have selected Microsoft
Word as my email editor, adn it works for my normal
emails.

how can I get it to work for my signatures?

You need to set MS Word as your HTML editor:

Open INTERNET EXPLORER to fix this:

Select the TOOLS menu
Select INTERNET OPTIONS...
Select the PROGRAMS Tab
Next to the HTML EDITOR... click the triangle next
to "Windows Notepad" and select "Microsoft Word
for Windows"

I followed you r instructrions and clicked the triangle
or arrow next to Notepad but it only gives 2 options,
Notepad and Microsoft Excel, which I find rather strange.
Perhaps I need to instal an add-on?

Try using the "Detect and Repair" option found on the
HELP menu of any of the Office Programs (ie Word, Outlook, etc.)

It could also be that the OP has not installed the HTML-editing capabilities
of Word. For example, I have "Microsoft Office XP Professional with
Microsoft FrontPage", but I have not installed the FontPage portion of this
suite, not have I installed the "HTML Source Editing" option in the "Office
Tools" set of options. Therefore, I have "Notepad" and "Microsoft Excel" as
my only two options in "Internet Options>Programs" I haven't tried it, but
I expect if I were to install one of those options, I'd have other choices
on the Programs tab.
