On my old email I could just put the person's name as I had it listed in my
address book and that was all that showed on the actual email. Now,
EVERYBODY'S address shows and I don't like that. It's putting everyone's
address "out there". How do I stop that?

The address was always there. It was in the header. Just because it wasn't
displayed doesn't mean it wasn't there. What, you thought the mail server
could determine which John Doe you were e-mailing?

Remember that what you see while composing an email is not necessarily
what the recipient sees when he receives that email.

All the information including full email address has to be in the message or
else that message would not get delivered. Once it is delivered, it is up to
the recipient's email program to decide what to show and what to hide.
You as the sender have no control over that.

Use BCC addressing when sending to multiple recipients.

No, of course not! But the entire address DID NOT SHOW (keywords here!) Next time you answer, why not try a little sarcasm for fun?!
