Setting Up nVidia 6800 Dual DVI to Play PC Games on HD Monitor--Help on How To?

I'm having trouble understanding and configuring my PC desktop computer to
properly format a game to my HD Monitor:

I think I also MUST LEARN how to save a Profile somewhere and somehow so I
can return to "complex" configuration(s) with the PC.

1. Generic PC desktop with nVidia 6800 that has two DVI and one S-video
outputs. Windows XP Home is the "OS". Latest beta nVidia drivers.

2. Monitor is a 34" CRT from Dish Network (model HD34-310). Although it
has a receiver for off air channels it does not include onboard format
controls and you can only rotate or move the picture horizontally--no
resizing. (The "DISH Network HD Monitor" is part of a Dish Network package
that uses the Dish PVR (DVR) dual receiver which has format controls built
into it rather then into the monitor.)

3. There is a huge difference between DVI and S-video (my only choices from
the 6800) so DVI is my only cable path. I hook up the DVI-1 output via the
nVidia provided adapter to my SamSung SyncMaster 955DF and games play just
fine on it.

3a. I hook up a second DVI cable straight from DVI-2 to the HD Monitor DVI
input. When I reboot the PC it is obvious that even the pre Windows
Desktop text on the HD monitor offers clarity and a larger size to warrant
trying to get the damn format for a game figured out.

4. I'm not certain where to go for "training" so I have posted to these two
newsgroups. If you want to recommend something/place else now is your
chance? :)

5. The nVidia is currently Dualview but I have tried/played with all the
others too. The card seems to recognize the HD monitor as a RCA Scenium.
This is quite possible as Dish Network says their TV is made for them by
Thompson which is RCA. I have a phone number to contact them Monday
(tomorrow).

THE PROBLEM...

I got the game, The Punisher, running with a proper 4:3 format on the HD
monitor and sized to where I was only missing a quarter inch at the bottom
of the game--I doubt it could have been sized better or look sharper. It
looked and seemed to play great and I created two profiles through nVidia's
Desktop Management. I did not write anything down though and that was my
BIG mistake. Rebooting the PC lost the format I had the HD monitor in and
neither of the profiles worked--in fact they seemed to goof up the screen
sizes so bad my desktop icons were all rearranged. I then spent hours
trying to get back to the format for The Punisher trying everything I could
click on. I'm at a total loss what to do next but I feel that if anyone
can describe what might be going on here I can probably find anything you
suggest to try or click on and we can go from there.

I can't make any promises but will try to reach nVidia, Thompson/RCA in the
morning.

I haven't changed any timings heading all the warnings and disclaimer not
to. I currently have nView Desktop Manager disabled but I've played with
its features and they did not straighten out matters. Right-clicking the
Desktop gives me three choices currently under NVIDIA Display...RCA
Scenium, Samsung SyncMaster, and HDTV Overscan Configuration. Setting the
later option to "Use underscan to show the entire Windows desktop was
significant yesterday just before getting the game to size right on the HD
monitor but it is still set that way now and doesn't seem to be doing its
magic--the current desktop and when I play the game both overscan on the
HD monitor.
