In MS Outlook, I had a "Notes" folder, where I'd keep little notes about
various Websites, etc. However, I don't see how to set this up in Windows
Mail, nor any way to import my MS Outlook Notes files over into Windows
Mail. Any suggestions, please?

That function is not supported in Windows Mail.
There is a reason why Outlook costs a lot more than WM.

If you have Outlook 2003 or newer, use that.

I have Outlook 2003, but have never used the Notes feature. I see where you
can export them to various file formats, or do a "File - Save As" which
saves them to .rtf format.

You can always create a folder on your desktop, and use Notepad or Wordpad
to edit your files.

Or, there's a Notes sidebar Gadget that I do use.
