Set FROM field default > Replying to messages in somebody else's mailbox in Outlook 2k3 + exchange 2

Scenrio......

I have exchange server running with 1 main mail account where fresh emails
come in from customers eg
(e-mail address removed)
now this mailbox is opened by every users account so in the folder view they
see their own account lets say (e-mail address removed) and the main info
one......

dave
inbox
sent items
outbox

info
inbox
sent items
outbox

All fine and dandy and emails are working in and out.

But if "Dave" for instance wants to answer an email int he info accounts
inbox he must select his name in the "from" field everytime (I know I can
allow Dave to answer on info's behalf, but this would be incorrect as I want
the replies to come back to dave)

How can I tell outlook (or exchange) to default the "from" field dave
everytime regardless of which inbox he's in?
(I know if he moves the messages to his own inbox it will default to "dave",
but this is more work)
It's probably something silly I am overlooking, I've searched and searched
on the interweb and not turned up anything to help me with this

Another thing somebody may be able to help me with, is there anyway to
include templates in OWA and to open up another users mailbox?? ( no big
deal if there isn't, but it would solve a short term issue I have with VPN)

If he opens up Dave as his primary mailbox, all replies will come from him.
