Server Nic speed

Would it be better to hard set our server's NICs to 1GB or
100MB on a network with 100+ computers running at 100MB
Full Duplex?

If the network will support gigabit connections then it would be best to set
the server at one gigabit, otherwise 100mbps.

Depends entirely on the switch(es) to which your server and workstations are
connected.
