Server move

I need to do a dcpromo on our Exchange server and have two new servers made
DC's. The exchange server was at the time of install the only server on the
network. But now with all the work being done via Exchange I would like to
offload everything except exchange. It is currently the catchall server.
Is there anything I need to watch out for, do, etc when building out the new
servers? I plan on moving DNS, DHCP, AD, WINS, etc off to these new
servers. A MS KB would be good as well.

First install new computers, promote them to DC's. Install DNS server on
both of them + WINS and DHCP server on one of them. Authorize and configure
DHCP server. change DHCP, so that the clients get new DNS servers in their
IP configuration. Use ntdsutil or UI to move all FSMO roles to new servers.
Assign both new servers as Global Catalog servers.
After you have done all this, you can de-dcpromo your exchange server to a
member server. Remove DNS and DHCP server from your exchange server.
