Senders "From" info replace by my Contact/GAL info when replying

I have an irritating problem where Outlook (2000/2003) takes it upon itself
to change the properties of the person that has emailed me if I happen to
have them as a contact or they also have a profile in the company's Exchange
Server GAL. For instance:

Another employee emails me from home using "Fred Smith <[email protected]>".
When I open the message and right click on "Fred Smith" in the From field
instead of seeing:

Display Name - Fred Smith
Email Address - (e-mail address removed)
Type - SMTP
Internet Format: Let Outlook Decide.....

I get the person's information from the Exchange server instead and don't
see the aol.com address anywhere. If I want to find out where the email
really came from I have to do one of the tricks like opening the .msg file
in Notepad and looking in the header which is a pain.

This is another pain. Sometimes I might even have the persons personal
email address in my contacts and in the GAL and I want to send the message
to their personal address and it switches it to the GAL. For instance:

Jane Doe has internal Exchange address (e-mail address removed) and I also have Jane
Doe in my own contact folder for her home address (e-mail address removed). Now I
know if I type Jane Doe in the To: box it is just going to take here company
email address so I go out of my way to type in (e-mail address removed) . Now
Outlook changes it to the display name Jane Doe, then changes the properties
by further resolving Jane Doe to the address (e-mail address removed). Now when I send
the message meant to go to her home, it goes to her inbox at work.

I know that the GAL is first im my list of address box however I don't want
to have to keep switching address book orders every time I send a message to
someone that has two addresses nor do I want to start to change my contact
to something like Jane A. Doe or Jane Doe - AOL Account.

And what happens if you click To and select her name from your Contacts
list?
