Rule question

I don't suppose anyone knows of a rule whereby I can send any message (to a
specific folder) where the sender's email address "isn't in my contact
list". I've tried to find such a rule, but dont' see one.

You can try using a rule that does something like this:
When message arrives
<no selection criteria> (hit next in Rules Wizard without selecting anything
and ignore the warning)
<action of your choice>
except if sender is in <whatever> address book
