reserved words

Does Word have reserved words for itself?? , i'm talking about the ..."{IF
{PAGE} < {NUMPAGES}....etc" , i know that PAGE, and NUMPAGE makes references
to the pages of document, but there is an IF, and in some examples on
internet even expressions like PAGE < NUMPAGE , etc. all of them in the
footer section, it's the only place where users can validate things??, can i
do other things than just compare values??

If there is actually a list of "reserved words", where can i find it?

The words that you refer to are what are called Fields in Word. You can see
a list of them and their purpose via the Insert>Field menu item. Their use
is not restricted to the Headers and Footers of a document. An exception is
probably the { STYLEREF } field.

A StyleRef field can be used anywhere in a document, not just the header or
footer, and in fact, it's what makes captions that include the chapter
number work.
