renamed domain account

We have an employee that left and we renamed his nt account to be the new
user so that the replacement kept the same permissions.

The account works and the user can log onto the put but the Documents &
settings\username folder is still in the old users name. Is there a way to
change this without re-creating the profile?

No, renaming an account is just that: renaming the logon-name used for the
account.
Anything already created with the old name (in terms of foldernames etc.)
will remain te old name, especially since a lot of that stuff is associated
with the account by means of the so-called SID (Security IDentifier).
