Greetings
Once one requests and recieves remote assistance from another party can the
requestor limit access to a folder? just a file? Advice sought

Nope - it's to the whole desktop of the logged-in user. However, unless the
novice grants the expert control the expert can't move the mouse or click or
do anything - the novice can click & the expert can see.
