I know I have somehow screwed up Word and Excel's feature by doing
something in Tweak UI, but I can't seem to undo it. Any help would be
gratefully appreciated.

no, I wrote that wrong - I meant LAST FILE USED, not "recent"

You probably changed something in the "Paranoia" tab. By default none
of these options are selected (check marked) on a standard Windows
installation.

what you say has a ring of truth to it, but I can't find the paranoia
tab - is there more than one version of Tweak UI? I am resetting this
after a hard drive crash . . .

The Paranoia tab is found on an old version of TweakUI. There are no tabs
on the XP versions of TweakUI.

Show or hide the list of recently used documents on the File menu

MS Word | Tools | Options | General tab |
Select or clear the Recently used file list check box.

When the Recently used file list check box is selected, you can specify the
number of recently used files that appear on the File menu.

just came from there - the options are there, but the recently used
files bit is all greyed out. next?? (thanks mucho)

Allow Recent Documents on Start menu
[[This check box enables the display of “Documents” on the classic start
menu and enables the “List my most recently opened documents” checkbox on
the Start menu customization dialog.]]

Clear document history on exit
[[This check box will control whether Explorer will clear the recent
documents history, run dialog history and typed-URL history when
you log off]]

Maintain document history
[[This enables the tracking of recently opened documents on the Start menu
and on the file menu of many applications. (Note that some applications do
not respect this setting). ]]

You may also want to double check the registry settings.

Also look at
HKLM\Software\Microsoft\Windows\CurrentVersion\Policies\Explorer
for the same Value Names as below.

Registry settings for TweakUI tweaks:
