How can I remove the "Documents" folder from my "Start" menu??

Right click the Start button,, Click Properties, Click Customize (on the
StartMenu Tab) Click Advanced then you can remove anything from there.
 
Are you talking about "My Documents" folder? If so, right click on the Start button and select Properties. Click the Customize button, then the Advanced tab. Scroll down to the My Documents category and check the option to not display the item.

Are you referring to "My Documents" appearing when you click "Start"? If so:
Right click an empty Desktop area/click "Properties" on the drop-down
Menu/click the "Desktop" Tab/check or uncheck any boxes to suit yourself.
 
Hi Paul,

If you meant Recent Files, right click the Start button/Properties/
Customize/Advanced and uncheck List my most recently opened documents
(beneath the scroll box).

To clear and prevent the Recent Files from being listed and stored:

To use the Regedit: Save the REG File to your hard disk. Double click it
and answer yes to the import prompt. REG files can be viewed in Notepad by
right clicking on the file and selecting Edit.
