Re-starting List Number numbering changes text to another style

If I re-start numbering in List Number style (Word 03), the style changes to
Caption, and adds numbers to all of the instances of Caption style throughout
the document (yes, several dozen tables). Yesterday, when I attempted to get
rid of the Caption's mysteriously added new numbering, Word crashes. So I
dumped the doc into a new blank one using the same template -- this allowed
me to then fix the Caption style and use List Number.

Now it's happened again today. However, instead of crashing when I attempt
to rid the Caption style of its new, spurious numbering, it just ignores my
changes in the style's definition.

How can I fix this problem?

In addition, even though we are not using the Reviewing feature, every time I
open the doc, I have to turn OFF the Final Showing Markup view.

And why is it that local Paragraph changes to the Body Text style are
changing *globally* even though the style is set to NOT Automatically Update?

And why is it that when I attempt to circumvent the Re-start numbering issue
noted above by instead using the basic Numbering toolbar button, pressing it
changes the selected paragraph's style from Normal to Heading 1??

PLEASE -- Is there a FAQ on how to develop *********RELIABLE********** Word
templates and documents? I've got engineers pissed at me, who think I don't
know how to do my job because of all of these issues. When I insist on using
Templates and all sorts of automated features, only to have them FAIL me, I
look like an incompetent @ss and risk them DEMANDING that I use NO styles,
templates, etc.!!!!

On the AutoFormat As You Type tab of Tools | AutoCorrect Options, be sure
you don't have "Define styles based on your formatting" checked. For help

This usually indicates that the document contains markup (it could be left
over tracked changes or comments). But see “Review Toolbar Annoyance†at

Changes to the style *should* update globally. If you're making changes to a
specific paragraph in the style, the change should not be propagated if you
don't have "Automatically update" checked.
