RDP Remote Screen Size...

My local desktop is a laptop, the max resolution is 1024x768. My remote
desktop is much larger than this (1280x1024), however, the RDP client only
lets me set the remote screen size to a max 1024x768. Is there any way to
setup RDP to run the remote screen size at 1280x1024 and just scroll around
to see the whole thing?

Create (save) an RDP profile on your desktop.
Make sure that you do NOT select "full screen" for the resolution.
Edit that file with a text editor and modify to the resolution you need.
Then - it will scroll if your current resolution does not equal (is not as
large) as that.
