1) In a small bussiness company with more than 30 computers connected to the
network with internet connection, what are the risks if an user leaves his
computer on overnight with the internet open, or not open?

If you have proper firewall protection, the risk is minimal. My machine
at work has a permanent internet connection and the machine is never shut
down for more than a few minutes.

If you don't have proper firewall protection, it's not safe to connect to
the internet at all.
