Printing Booklet on Toshiba e-studio 3500C

We have a Toshiba e-studio 3500C photocopier networked to our MACs for
the purposes of printing.

We've recently had a Fiery added for accurate colour rendering, but
find we can no longer print a booklet.

The menu option is: Printer Features / Finishing, where there is a
Duplex format option (which works) and a tick box for a booklet. But
ticking the box appears to make no difference - would expect to see A4
portrait pages reduced to A5 and printed side-by-side on A4 landscape.

Any clues?

Normally a Fiery can run a number of very similar printers, is it
possible it thinks you have a non-duplex one and so is disabling the
option? So there's the setup of the printer on both the computer and
the fiery to look at.
