Please help with program access in profiles

In Windows XP Home I am the computer administrator and have setup a profile
for my wife as a limited user with Outlook Express as the default email
program, however when she clicks on a link on a webpage to send an email
MS Outlook opens up instead! In Internet Explorer under her profile I set
the preferences for outlook express, however it defaults back to Outlook!
How do I set up her profile so Outlook or other programs are not available
in her profile? She is not computer savvy and of course it is my fault she
cannot comprehend to open outlook express and copy and paste the address....
I can see Outlook under c:documents and settings\all Users. Shall I take it
out of there and place it under my profile only? The computer is working
fine and I do not want to mess things up! Please help me!
 
When she opens a browser window, select tools, internet
options, go to Programs Tab and select Outlook Express as
mail program, click OK. This should correct the problem.
