Page numbers - x of y

Hi,
I have a cover page and a section with roman numerals at the start of my
document, and want to have my pages numbers as 'x of y'. The default is to
show the total number of pages in the document, including all sections.

I followed the result given previously (2007) which was to use alt + F9, and
change the field to 'SECTIONNUM'.
This works when I have one main section following the roman numeral
section, but if I have more than one section, what should I do?

Here is one possibility:

In the first section, somewhere in the header or footer, insert a
{SECTIONPAGES} field, then, set it to a white font so it won't be visible.
After that, set a Bookmark to that field, let's say "Sec_Pages".

Then, in the other sections, were you want the total pages minus the number
of pages in the front section, use something like this:

{= {NUMPAGES } - {REF Sec_Pages}}

(Do CTRL-F9 to insert each pair of { }.)
