Unless you're using Outlook as a POP or IMAP client all you have to do is
make sure your default delivery location for Exchange (Tools | E-mail
Accounts | View or change e-mail accounts...) is set to your Mailbox and
not to a Personal Folders File.

If you pop your mail you can leave a message on the server, but if you use
mapi to connect to the exchange server all the messages is stored on the
server.

Yes, that's true as long as you leave your default delivery location as
your Exchange mailbox. Some people set it to be their Personal Folders
File (PST) which moves the items to the local hard drive - sometimes with
unfortunate consequences.
