How do I create a rule to forward unread email from my
inbox to another user in outlook 2000?

By using the Wizard Rules under Tools. Where do you get stuck?

I am trying to setup a rule that will forward unread email
3 days old from a users inbox to another user to action. I
have recently moved from Groupwise 5.5 to exchange
2003/outlook2000. Groupwise had the ability to use wild
cards etc to enable this rule to function but I can not
seem to get the same result from the rules wizard.

Outlook can't do this (at least not natively). Outlook Wizard Rules can
either check messages on receiving or sending.
