I don't think this is documented by someone as Outlook 97 is no longer
supported by Microsoft and definitely not being thought of during the
Exchange 2003 production process.
I suggest you setup a test environment with Outlook 97 on an Exchange 2003
and let some users test their daily activities with it. If those users don't
encounter any (severe) problems and the time frame of using Outlook 97 with
Exchange 2003 isn't that long it shouldn't be a problem.
When you encouter any problems you can post back anytime.
