Outlook 2003: how to ged rid of single quote around names in email address fields?

Outlook 2003 has a very annoying habit: it adds single quotes around names
in email address fields as soon as I use the Reply function. This makes
sorting by name much less useful because every name appears twice, once with
and once without those single quotes. Two make it clear, let me explain
using an example:

I.e. I have someone called John in my address book with John as name and
(e-mail address removed) as email address. Then the field "Show email address
as" just below the email address itself in Outlook Contacts would show
John ([email protected]).
Now if I send an email to John, then in the email field TO John would appear
as
John ([email protected])
which is exactly what is expected.

Now when I get a reply from John, in the folder index pane, in the FROM
field he would show as
John
only, supposing that in his email program he has entered his real name.
Only in the preview pane or if I open the email fully, he'd show as
John [[email protected]]
It's sort of surprising that OL2003 uses brackets instead of paranthesises
here but not that I could care less, except maybe that I can't tell the
email adress he's been using, in case he's got more than just one.

But now, when I in return reply to John again, then at first his name
appears in the TO field as
John <[email protected]>
Again nothing to worry about, except that OL2003 uses another kind of
brackets for no reason at all. But as soon as the email has been sent, it
would show
'John'
in the folder index pane as well as in the preview pane and in the email
opened fully.

So first drawback, I can't tell his email address any more, as before.

But worse and more annoying, now I've got two different Johns when I try to
sort using the addressee in the TO field: Someone called John and another
person called 'John'. So all my conversation with John would be split into
two groups: usually my first initial email would be to John, and then all my
replies after receiving his email would be addressed to 'John'.
