opening files

Every time I try to open a file, it automatically tries to
use Adobe Acrobat, how do I get it to stop this and try
the other programs as well?

I apologize for my ignorance, so please bear with me. I
right click on th file and it gives me a window
with"open", "print", "save as...", or "save all" options.
And I'm not sure I know what programs I want to open files
with. Can't XP do that or is there a way for me to tell?
